I called the insurers (NFU Mutual) and their response was that they would only pay what their 'engineer' valued the machine at which would generally be the book price which, of course, didn't account for the value placed in the policy, making it somewhat of an academic figure.

She suggested I take it up with someone else within their company who could advise best on what to do, I guess it would mean that anything thats a 'collectors piece' would need an independent valuation

Good point, I never thought of it like that, but guess your probably correct.
Rather like itemising valuables on a house contents policy.
